Green Salsa

I love green salsa. It goes great with almost everything.  Dip your chips in it, pour it over your burrito or tacos, use it to bake chicken or fish. The possibilities are endless.  Even more, it is SO easy to make and you can make your own variations to make it spicy, chunkier, or include any other vegetable. The type of peppers you use will modify spiciness and flavor. You can add avocado to make it creamy, corn or beans.

I learned this recipe from my brother and combined it with a recipe of ‘mojo verde’ that I saw on the food network.

Ingredients

6-8 Green tomatillos
2 poblano peppers (or any other pepper to make it spicy.)
1 white onion
4-6 Garlic cloves
1tsp of white vinegar
Salt
Olive oil

Directions
1. Preheat the oven to 375F.
2. Place all the vegetables in a baking dish with olive oil and roast for about 40 min or until golden.
3. Place in a blender or food processor and blend until desired consistency.
4. Store in a glass container.

Enjoy it with your favorite bag of corn chips, or pour over and bake it with salmon for a delicious dinner.
